My thought is we can simply take money out of an ATM when we get there. CapitalOne360 isn't going to charge us, so our only fees would be on the ATM we use, and it sounds like European banks often don't charge fees for using their ATMs (of course).
If we want to be safe, we can take out 100 Euros or before we leave, so we have some cash when we get there. I'm sure there is a Chase branch that can do that. I'm also sure they will charge us a fee for that service. Not sure if a currency exchange would be cheaper.
We can use cash to pay for things. If we want to use a card, it's more expensive to use the Amex, cause of the foreign transaction fees, but I think we probably get more fraud protection on a credit card than on our debit card.

According to some online searching, Chase is best for changing. I think it's advantageous for us to have some with us, but we can pull the rest from ATMs.
